Scalloped Oysters

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the oysters

  1. Stew the oysters slowly in their own liquor for 2-3 minutes.

  2. Remove the oysters with a spoon.

  3. Remove the gills.

  4. Skim the liquor.

Make the crumb mixture

  1. Melt the butter in a stew pan.

  2. Add enough bread crumbs to absorb the butter.

  3. Add the oyster liquor to the bread crumbs.

  4. Bring to a boil.

Assemble and brown

  1. Butter scallop shells.

  2. Layer the shells with oysters and bread crumbs, repeating the layers.

  3. Moisten the top layer with oyster liquor.

  4. Cover with more bread crumbs.

  5. Dot with butter.

  6. Brown the shells in a Dutch oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and a tender, briny filling when gently cooked.
Butter
Adds richness and fat, and helps the top crumbs brown.
Bread crumbs
Absorb the butter and liquor, giving the dish body and a soft, set texture.
Oyster liquor
Adds moisture and concentrated oyster flavor to the crumbs and layers.

The step that matters

Stewing the oysters slowly for 2-3 minutes. Oysters are protein-rich and toughen and shrink quickly when overheated. A gentle, brief stew just firms their edges, keeping them plump and tender in the finished dish.
