Ingredients

Directions

Prepare

  1. Scrape and wash the carrots, then peel off the red outside.

  2. Chop the onion and add it to a gallon stew-pan with the carrots and celery.

  3. Pour in the broth and cover the pan.

Cook and strain

  1. Cook on low heat for 2.5 hours until the carrots are soft.

  2. Optionally, add 1 cup of bread crumbs and boil for 2-3 minutes.

  3. Rub the mixture through a fine sieve with a wooden spoon, adding more broth to achieve a thick consistency.

Serve

  1. Heat the soup in a clean stew-pan, season with salt, and serve with toasted bread on the side.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Carrots
Form the main body of the soup and give it sweetness and colour.
Broth
Provides the liquid that softens the vegetables and carries the flavour of the soup.
Celery
Adds savoury aroma and flavour to the base as it cooks.
Onion
Adds savoury aroma and depth of flavour as it softens in the pan.

The step that matters

Rubbing the mixture through a fine sieve. The cooked vegetables must be soft enough to pass through the sieve smoothly. Pushing them through gives the soup a smooth, thick texture, and adding broth adjusts the consistency if it is too stiff.

Swap the onion

How well each one fits the dish's main ingredients (carrot, celery, beef, bread):
