Why it works: Marjoram and thyme match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,225 recipes. Both carry terpineol, which smells pine, woody. The science ↓
Ox-head Soup
Ingredients
Directions
Prepare the cheek
Soak the ox cheek in cold water for 2 hours.
Break any unbroken bones and wash the meat in warm water.
Place the meat in a pot and cover it with cold water.
Simmer the soup
Bring to a boil, skim off any scum, then add celery, carrots, turnip, onions, peppercorns, allspice, sweet herbs, and parsley.
Cover the pot and simmer gently on low heat for about 3 hours.
Remove the ox cheek, let it cool, and then cut into neat pieces.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Ox cheek
- Provides the meat and gelatin-rich body that gives the broth its richness and the pieces their texture.
- Celery
- Adds savoury aromatic flavour to the broth as it simmers.
- Carrots
- Add sweetness and aromatic depth to the broth as they cook.
- Onions
- Contribute savoury sweetness and depth of flavour to the broth.
- Turnip
- Adds earthy, mildly sweet flavour to the broth as it cooks.
The step that matters
Skimming off the scum after boiling. Scum is coagulated protein and impurities that rise when the liquid first boils. Removing it keeps the broth clear and clean-tasting rather than cloudy or greasy.
Swap the onion
How well each one fits the dish's main ingredients (celery, carrot, turnip, allspice, marjoram, lemon, thyme):
- Parsnipfits better
- Leekfits better
- Arrowrootfits better
- Onionthe original
Fit is the average pairing score against celery, carrot, turnip, allspice, marjoram, lemon, thyme. Candidates are from the same food group and used in at least 100 recipes.
