What each ingredient does

Hen lobster
Supplies the sweet meat and the spawn that give the sauce its flavour and body.
Butter
Pounded into the spawn and melted butter to carry richness and create a smooth, glossy texture.

The step that matters

Warm the lobster gently without boiling. High heat can toughen the delicate lobster meat and cause the butter emulsion to separate, leaving the sauce greasy and grainy.
