Bread Sauce

Ingredients

Directions

  1. In a saucepan, combine the bread crumbs and enough milk to soak them, plus a little extra.

  2. Alternatively, use giblets, head, neck, and legs of poultry to make broth and moisten the bread.

  3. Add the onion and peppercorns to the mixture and bring to a boil.

  4. Stir well, then reduce heat and let it simmer until thickened.

  5. Remove the onion and peppercorns, then stir in the cream or melted butter before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the liquid and form the thick body of the sauce.
Milk
Softens the crumbs and, simmered, thickens into a smooth, creamy sauce.
Cream
Adds richness and a silky mouthfeel at the end.

The step that matters

Simmering until thickened. Once the bread has soaked up the milk, the mixture thickens as starch swells. Simmering gently while stirring prevents scorching on the bottom of the pan and lumps forming, and the sauce should be removed from heat once it reaches the desired consistency.

Swap the allspice

How well each one fits the dish's main ingredients (bread, milk, onion, cream):

  1. Garlicfits better
  2. Nutmegfits better
  3. Celeryfits better
  4. Allspicethe original

Fit is the average pairing score against bread, milk, onion, cream. Candidates are from the same food group and used in at least 100 recipes.
