Chantilly Basket

Ingredients

Directions

  1. Dip small Ratafias into sugar boiled to a caramel and arrange them on a dish in your desired shape.

  2. Dip larger Ratafias into the caramel and stack them to form a structure about 4 to 5 inches high.

  3. Create a rim using York Drops or Drageas of Gum Paste and place it over the basket.

  4. Line the inside of the basket with wafer-paper.

  5. Just before serving, fill the basket with a mixture similar to Trifle and top it with plenty of whipped cream.
