Orange Jelly

Ingredients

Directions

Make the jelly

  1. Boil water with isinglass, orange rind, cinnamon, coriander, and loaf sugar until isinglass dissolves.

  2. Squeeze Seville oranges and enough China oranges to make 1 pint of juice; mix with the boiled mixture.

  3. Strain through a fine sieve into a basin and set in a cold place for 30 minutes.

  4. Pour into another basin free from sediment; when it begins to congeal, fill your mold.

Serve

  1. To serve, dip the mold in lukewarm water, turn it out onto a dish, and garnish with orange or lemon slices.

What each ingredient does

Isinglass
Gelatinous protein that sets the liquid into a firm jelly as it cools.
Loaf sugar
Adds sweetness and body to the syrup, balancing the sharp citrus juice.
Seville oranges
Provide the main juice and bitter-sharp citrus flavour of the jelly.
China oranges
Add juice to make up the full pint and contribute sweet orange flavour.

The step that matters

Strain and rest before pouring into the mold. Straining through a fine sieve removes rind, spices and sediment so the jelly sets clear. Pouring off the clear liquid before it congeals keeps the set smooth and free of cloudiness.

Swap the saffron

The recipe marks saffron as optional. How well each one fits the dish's main ingredients (orange, cinnamon, coriander, sugar):

  1. Cardamomfits better
  2. Gingerfits better
  3. Allspicefits better
  4. Saffronthe original

Fit is the average pairing score against orange, cinnamon, coriander, sugar. Candidates are from the same food group and used in at least 100 recipes.
