What each ingredient does

Citric acid
Provides the sour, sharp taste that makes the drink taste like lemonade.
Lemon peel extract
Adds a concentrated lemon aroma and flavour.
Clarified syrup
Supplies sweetness that balances the sourness of the acid.

The step that matters

Adding the acid to the syrup. Citric acid is strong and dissolves gradually, so adding it slowly and tasting as you go keeps the balance of sweet and sour right. Adding too much at once makes the drink harsh and hard to correct.
