Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Mullet

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Clean and gut the mullet, then rinse it under cold water.

  3. Season the inside and outside of the fish with salt and pepper.

Bake and serve

  1. Drizzle olive oil over the fish and place lemon slices and herbs inside.

  2. Place the fish on a baking sheet and bake for 20-25 minutes, or until cooked through.

What each ingredient does

Mullet
Forms the main body of the dish and cooks into flaky, moist flesh.
Olive oil
Adds moisture and fat so the fish stays tender in the oven.
Lemon
Adds acidity and aroma that brighten the mild flavour of the fish.

The step that matters

Bake until cooked through. Fish cooks quickly and becomes dry and tough once overcooked. Checking that the flesh is opaque and flakes easily at the thickest part helps keep it moist.
