Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the pudding its body and soft, chewy texture.
Eggs
Set when steamed, giving the pudding structure and richness.
Butter
Adds fat for richness and a smooth, tender mouthfeel.
Sugar
Adds sweetness and helps balance the richness of the eggs and butter.
Ratafia cakes
Add a distinct almond-like aroma and flavor to the pudding.

The step that matters

Stir in the beaten eggs briskly. Adding eggs to hot mixture can scramble them into lumps. Brisk stirring disperses the eggs evenly so they set into a smooth custard-like texture when steamed.
