Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Line patty tins with puff pastry.

Make the mixture

  1. Beat the egg whites until frothy.

  2. Gradually beat in the sugar for about 10 minutes.

  3. Mix in the ground almonds.

Bake and decorate

  1. Spoon the mixture into the lined tins to make two dozen cakes.

  2. Bake in the preheated oven.

  3. Decorate each cake with tiny strips of puff pastry in a cross pattern.

What each ingredient does

Ground almonds
Provide the bulk and nutty flavour of the cake mixture.
Castor sugar
Sweetens the mixture and helps stabilise the beaten egg whites.
Egg whites
Whipped to foam, they give the mixture lift and structure as it bakes.

The step that matters

Beating the sugar into the egg whites. Adding the sugar gradually, after the whites are frothy, lets them whip to a stable foam. A stable foam traps air and keeps the cakes light rather than dense or collapsed.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
