Celery Sauce , Brown

Ingredients

Directions

Prepare the chestnuts

  1. Remove the outer rind from the chestnuts and place them in boiling water for 3 minutes to easily remove the inner skin.

  2. Put the peeled chestnuts in a saucepan with the Consommé and butter, and let them stew until soft.

  3. Transfer the chestnuts to a mortar and pound them, then pass through a wire and hair sieve.

Finish the sauce

  1. Mix the chestnut puree with the Consommé they were stewed in, adding enough Brown Sauce to achieve a smooth custard-like consistency.

  2. Stir in the sugar and salt, then boil over low heat while stirring continuously until ready to use.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spanish chestnuts
Provide the main body and creamy texture once pureed and sieved.
Brown sauce
Adds body and helps bring the puree to a smooth, custard-like consistency.
Consommé
Adds liquid to loosen the puree and carries savory flavor through the sauce.
Butter
Adds fat for richer mouthfeel and a silkier finish.
Sugar
Adds sweetness that balances the savory brown sauce and consommé.

The step that matters

Stirring while the sauce boils over low heat. The starchy chestnut puree thickens as it heats and can scorch or stick to the base of the pan. Constant stirring keeps heat even and the texture smooth.

Swap the chestnut

How well each one fits the dish's main ingredients (sauce, butter, sugar):

  1. Almondfits about as well
  2. Chestnutthe original
  3. Pistachiofits about as well
  4. Cashew nutfits about as well

Fit is the average pairing score against sauce, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
