What each ingredient does

Tomatoes
Provide the main body and fresh tomato flavour of the sauce.
Brown sauce or espagnole sauce
Adds body and savoury depth as the base the tomatoes stew in.
Sweet shallot
Adds a mild, sweet aromatic note that softens during stewing.
Chilies
Add heat and a sharp, pungent flavour to the sauce.

The step that matters

Pass through the sieves. Stewed tomatoes break down into pulp and skins that stay gritty unless pressed through a wire sieve and then a fine sieve. Straining in two passes gives a smooth, glossy sauce.

Flavor stand-ins for the shallot

How well each one fits the dish's main ingredients (tomato, sauce):

  1. Capsicumbetter flavor fit
  2. Eggplantbetter flavor fit
  3. Okrabetter flavor fit
  4. Shallotthe original

Fit is the average pairing score against tomato, sauce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
