Why it works: Rye and wheat match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 404 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Mixed Breads

Ingredients

Directions

  1. Mix equal proportions of rye flour, wheat flour, and rice paste to make a good bread.

  2. Alternatively, mix rye, wheat, and barley flour in equal parts.

  3. For a different option, combine half Indian corn flour with half wheat flour.

  4. To use potato flour, mix one part potato flour with three parts wheat flour.

  5. Allow the bread to rest for two days before eating for better flavor.
