What each ingredient does

White currants
Provide the fruit pectin and acid that let the juice set into a firm jelly.
Loaf sugar
Sweetens the juice and, in quantity, helps the jelly set and keeps it preserved.

The step that matters

Simmering until firm. Cooking too briefly leaves the jelly runny, while cooking too long can darken and toughen the flavour. Stirring and skimming keep the set clear and prevent scorching on the bottom of the pan.
