Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the drink as its proteins set when gently heated.
Sherry
Adds its characteristic flavour and aroma to the drink.
Cold water
Dilutes the sherry and helps cool the egg so it blends smoothly.
Sugar
Adds sweetness to balance the sherry.

The step that matters

Stirring over gentle heat without boiling. Egg proteins set when heated, so if the mixture gets too hot or boils, the egg will scramble and turn grainy instead of smoothly thickening.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, sherry, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Clovefits less well
