Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the eggs well in a bowl.

  3. Mix all the ingredients together until smooth.

Bake and serve

  1. Pour the mixture into little cups, filling them half full.

  2. Bake for 20 minutes until the puffs are golden brown.

  3. Turn the puffs out onto a flat dish.

  4. Rub a little butter over each puff and dust with powdered sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the batter into a light, custard-like structure as the puffs bake.
Flour
Gives the batter body so it holds its shape while the puffs rise.
Milk
Provides liquid that turns to steam in the oven, helping the puffs rise and stay tender.
Butter
Adds richness and flavour and helps the crust brown.

The step that matters

Bake until golden brown. The puffs rise on steam from the batter and set as the egg proteins firm. Pulling them too early leaves them collapsed and wet inside, while over-baking dries them out.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, egg, milk, butter):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Capersfits less well
  4. Parsleyfits less well

Fit is the average pairing score against flour, egg, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
