Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soles
Provides the main protein, whose flesh firms and flakes as it cooks.
Cream
Adds richness and body to the sauce that coats the fish.
Lemon juice
Adds acidity that brightens the rich cream sauce.

The step that matters

Simmer gently and add the lemon last. Rapid boiling toughens and breaks delicate fish flesh. Cream can curdle when acid is added to it hot, so the lemon juice goes in only just before serving.

Swap the mace

How well each one fits the dish's main ingredients (pepper, lemon, cream):

  1. Parsleyfits better
  2. Tarragonfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against pepper, lemon, cream. Candidates are from the same food group and used in at least 100 recipes.
