Turkey, Roast

Ingredients

Directions

  1. Prepare the turkey by removing the neck and flattening the breastbone.

  2. Fill the breast with forcemeat and truss the turkey securely using a needle and twine or skewers.

  3. Cover the breast with buttered paper and roast at a distance from the fire, basting frequently.

  4. About 30 minutes before serving, remove the paper, dredge with flour, and baste with melted butter until golden brown.

  5. Serve with brown gravy and bread sauce, garnished with fried sausages or forcemeat balls if desired.
