Ingredients

Directions

  1. Remove the bone from the fillet and lift the skin from the meat.

  2. Stuff the flap with forcemeat and bind the veal into a round shape.

  3. Dredge the outside with flour and place it at a distance from the fire to start cooking.

  4. Baste continually and move it closer to the fire about 30 minutes before serving to brown the outside.

  5. Once cooked, remove the skewers and replace them with a silver one.

  6. Pour melted butter over the joint and serve with boiled ham, bacon, or pickled pork.

  7. Always serve with a cut lemon.
