Veal and Ham Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Assemble the pie

  1. Cut the veal into square pieces and layer them in a pie dish.

  2. Sprinkle with herbs, spices, lemon peel, and sliced egg yolks.

  3. Add a layer of thinly sliced ham on top.

  4. Repeat layering until the dish is full, ensuring ham is on top.

  5. Pour in 2 cups of water.

Top and bake

  1. Cover the edge of the dish with puff pastry.

  2. Seal with crust.

  3. Decorate with leaves.

  4. Brush with egg yolk.

  5. Bake in a preheated oven at 400°F (200°C) for 1 to 1½ hours, longer if the pie is large.

  6. After baking, pour in 1 cup of strong gravy through a funnel.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Forms the bulk of the pie and becomes tender and moist during the long bake.
Boiled ham
Adds savory, salty flavor that seasons the meat layers as it cooks.
Hard-boiled egg yolks
Enrich the filling and add a rich, creamy flavor to the meat.
Puff pastry
Forms a flaky, golden crust that encloses the filling.

The step that matters

Pour in 2 cups of water before sealing. Water in the dish turns to steam and cooks the meat gently, keeping the veal moist and building a savory liquid for the pie. Without enough liquid, the meat can dry out during the long bake.

Swap the mace

How well each one fits the dish's main ingredients (veal, ham, nutmeg, pepper, lemon, egg):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against veal, ham, nutmeg, pepper, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
