Brochet Op Smelts

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Spread melted butter on a dish and sprinkle with bread crumbs.

  2. Season with pepper, salt, chopped parsley, and shallots.

  3. Pour wine and a little Harvey and anchovy sauces over the fish.

  4. Repeat the seasoning on top of the smelts.

  5. Bake in a 400°F (200°C) oven for 15 minutes.

  6. Serve hot on a napkin, garnished with lemon pieces and fried parsley.

  7. Arrange the smelts on small skewers.
