Pigeon Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Bone the pigeons and lay them back upwards on a cloth.

  3. Season the inside of the pigeons with pepper, coarse sea salt, and chopped onions.

  4. Layer forcemeat inside the pigeons, then add veal and bacon pieces alternately.

  5. Cover with another layer of forcemeat.

  6. Line a pie mold with pie crust, then add a layer of forcemeat about ½ inch thick.

  7. Place the seasoned pigeons on top, creating a dome shape with the forcemeat.

  8. Add 2 bay leaves and a small pat of butter on top.

  9. Cover the pie and bake until golden.
