Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the bulk of the filling, providing the main body of each croquette.
Allemande sauce
Binds the chicken and truffles into a stiff mixture that holds its shape when formed.
Truffles
Add a strong aroma and earthy flavour to the filling.
Eggs
Bind the coating so the bread crumbs adhere evenly to each piece.
Bread crumbs
Form a crisp, golden browned outer crust when fried.

The step that matters

Make the filling stiff before shaping. If the Allemande sauce mixture is too loose, the pieces will not hold their shape and may break apart or leak during coating and frying. A firm, cooled mixture keeps the croquettes intact.

Swap the parsley

How well each one fits the dish's main ingredients (chicken, truffle, sauce, bread, egg, pepper):

  1. Parsleythe original
  2. Tarragonfits about as well
  3. Capersfits about as well
  4. Garlicfits about as well

Fit is the average pairing score against chicken, truffle, sauce, bread, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
