What each ingredient does
- Rum
- Extracts oils from the peels and carries the aroma through the punch.
- Loaf sugar
- Adds sweetness and balances the acidity of the citrus juice.
- Boiling milk
- Its proteins curdle with the acid, carrying off cloudiness so the punch clears.
- Seville oranges
- Supply bright acidity and aromatic oils from the juice and peel.
- Lemons
- Add further acidity and citrus aroma from the juice and peel.
The step that matters
Pour in the boiling milk and cover without stirring. The hot milk curdles when it meets the acidic citrus mixture, and the curds trap cloudy particles as they settle. Stirring breaks up the curds so they stay suspended and the punch stays cloudy, so the mixture is left undisturbed until it stands.
