Irish Stew

Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Layer and cook

  1. Layer sliced potatoes in a large saucepan.

  2. Add a layer of sliced onions, then season with pepper and salt.

  3. Place a layer of mutton chops on top, repeating layers until all ingredients are used, with potatoes on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the meat and fat that flavour the stew as it simmers slowly.
Potatoes
Break down slightly during simmering, thickening the broth and adding body.
Onions
Soften during long cooking, adding sweetness and savoury depth to the broth.

The step that matters

Skimming the foam after boiling. Foam rises from proteins and fat released as the liquid heats. Skimming it early keeps the broth clear and stops off-flavours from settling back into the stew during the long simmer.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
