What each ingredient does

Veal breast
Provides the meat that becomes tender during slow simmering.
Butter and flour
Form a roux that thickens the stock into a smooth, body-rich sauce.
Egg yolks
Enrich and thicken the sauce as they gently set when stirred in off the heat.
Mushrooms
Add earthy flavour and a tender bite to the finished sauce.
Lemon juice
Adds acidity that brightens the rich, creamy sauce.

The step that matters

Stir in the egg yolks off the heat. Egg yolks thicken by gentle heat. If the sauce boils after they are added, they can scramble and curdle, leaving the sauce grainy instead of smooth and velvety.

Swap the onion
