What each ingredient does

Young chicken
Provides the meat that is cooked and carved for serving.
Butter
Adds fat and richness, carrying flavor and helping the skin-free surface brown.
Fat bacon
Can replace butter as a fatty covering that bastes the chicken and adds savory flavor.

The step that matters

Basting frequently while roasting. Fat brushed over the surface keeps the meat moist and promotes even browning, so the chicken does not dry out during the 30-minute roast.
