On Stock, and Clear Soups

Ingredients

Directions

  1. Cover the meat with cold water in a large open vessel.

  2. Slowly bring to a boil, skimming carefully.

  3. Once skimming is complete, add the vegetables, bouquet of herbs, sugar, sauce, and ketchup.

  4. Simmer for three hours.

  5. Strain the broth to obtain clear beef consomme.

  6. Skim off any fat while simmering and save it for frying.

  7. If the consomme is not clear, clarify it by adding small pieces of raw beef and reheating.
