Ai'ticlioke Scallops

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the artichokes

  1. Boil the artichokes until tender.

  2. Once cooled, strip the leaves and scrape off the pulp with a knife.

  3. Extract the 'chokes' and combine the bottoms with the leaf pulp.

Make the filling

  1. Mash the mixture with a fork, then season with salt and pepper.

  2. Mix in the thick cream and stir well.

Bake and serve

  1. Butter silver plated coquille shells and fill them with the artichoke mixture.

  2. Dust the surface with bread crumbs and dot with small pieces of butter.

  3. Bake in a preheated oven at 350°F (175°C) until hot and golden brown.

  4. Serve on a napkin.

What each ingredient does

Artichokes
Provide the main body and flavour of the filling.
Thick cream
Adds moisture and richness, giving the filling a smooth, creamy texture.
Butter
Adds fat for richness and helps the crumb topping brown in the oven.
Fine bread crumbs
Form a crisp, golden topping on the surface when baked.
