What each ingredient does

Espagnole sauce
Forms the thick, savory body of the sauce that carries all the other flavours.
Red currant jelly
Adds sweetness and a glossy finish that balances the sharp vinegars.
Madeira
Adds a rich, aromatic sweetness that deepens the flavour of the reduced sauce.
Mushrooms
Contribute earthy flavour and a soft, meaty texture to the finished sauce.
Gherkins
Add acidity and crisp texture that cut through the richness of the sauce.
Anchovy vinegar
Adds sharp acidity and a salty, savoury depth to the sauce.

The step that matters

Boiling until thickened to the consistency of cream. The sauce must reduce enough to coat the back of a spoon. Too little reduction leaves it thin, while overboiling makes it too thick and concentrated, so the cook has to watch closely and judge by texture.
