Ingredients

Directions

  1. Butter a sauté pan and add pieces of rabbit fillet with slices of onion and carrot.

  2. Fry the rabbit gently, then add enough gravy to cover the pieces.

  3. Stew the contents of the pan carefully.

  4. Pack croustades like miniature vol-au-vent with rabbit, tongue or ham, kidney, and other ingredients, moistening with creamy veloute.

  5. Top each with a slice of truffle and cover with a fitting cap.

  6. Bake in the oven for a few minutes until perfect.

  7. Serve quickly on a napkin, garnished with fried curly parsley, and send around dry toast.
