Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Mutton Cutlets a LA Maiutenou
Ingredients
Directions
In a stew-pan, combine mutton choplets, bacon scraps, onion, carrot, dried herbs, pepper, salt, nutmeg, gravy, and sherry.
Gently stew the choplets until cooked through.
Transfer the choplets to a large dish, cover with another dish and a weight, and let cool.
Strain the cooking gravy, remove fat, and set aside.
Fry minced onion until golden brown, then add minced capers, truffles, pepper, salt, parsley, and a little gravy.
Thicken the mixture with eggs and let it cool.
Grease papers for the cutlets, spread the cold mixture over them, and carefully fold the papers.
Broil the cutlets on a grill until heated through, or heat them in the oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
