Galantine of Fowl

Ingredients

Directions

  1. Flatten the carcass of the fowl with a cutlet bat.

  2. Make a forcemeat by mixing bread crumbs, bacon, lime rind, thyme, marjoram, spiced pepper, salt, parsley, and eggs in a basin.

  3. Trim the meat from the carcass to create a level foundation.

  4. Slice the picnic tongue, separating fat from lean, and keep them handy.

  5. Mince the liver, gizzard, and heart together with spiced pepper.

  6. Spread a layer of forcemeat on the fowl, followed by a layer of tongue slices, then the meat from the fowl, and another layer of forcemeat.

  7. Add the minced liver mixture and place the block of tongue on top.

  8. Fold the carcass over the layers and sew it up securely with twine.

  9. Wrap in a clean cloth and tie it up with cross strings.
