Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the sauce as it heats, giving it a smooth, glossy body.
Sherry or wine
Adds acidity and aroma to the sauce.
Lump sugar
Adds sweetness and balances the lemon's tartness.
Lemon peel
Infuses the boiling water with citrus aroma and oils.

The step that matters

Add the arrowroot mixture to the sauce and stir well. Arrowroot must be stirred in evenly and kept moving while the liquid is hot, otherwise it can clump and fail to thicken smoothly.
