What each ingredient does

Boiled rice
Forms the bulk of the croquettes and gives them their body.
Egg
Sets when cooked, binding the rice so the shapes hold together.
Milk
Adds moisture and softness to the rice mixture.
Butter
Adds fat for richness and a softer texture in the mixture.
Sugar
Adds sweetness and helps the surface brown when fried.

The step that matters

Cooking the egg into the rice mixture. Egg proteins set when heated, so the mixture must be cooked briefly after the egg goes in. Under-cooking leaves it runny and hard to shape, while overcooking can make it dense and rubbery.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
