Why it works: Carrot and pepper match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 14,555 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ox-tail Soup

Ingredients

Directions

  1. Cut the ox tails into joints.

  2. Stew the joints slowly in a pot with sufficient water, carrots, onions, pepper, and salt for 3 to 4 hours until the meat comes off the bones easily.

  3. Remove the ox tail pieces and set them aside.

  4. Thicken the stew with flour and fried onion, then dilute with good consomme.

  5. Strain the soup, add the ox tail pieces, bring to a boil, and serve.
