What each ingredient does

Fish
Gives the broth its main flavour and body as it cooks down.
Onions
Browning in oil builds sweetness and a deeper savoury base.
Tomatoes
Add acidity and body, helping the broth taste rounded and fuller.
Olive oil
Carries flavour from the onions and adds richness to the broth.
Sherry or white wine
Adds acidity and aroma that brighten the fish flavour.

The step that matters

Reducing the liquid to one-third. Boiling over high heat concentrates flavour as water evaporates. Reducing too little leaves the broth thin and bland, while reducing too far makes it salty and intense, so watch the volume closely.
