Why it works: Carrot and celery match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,173 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Boiled Leg of Mutton
Ingredients
Directions
Prepare the mutton
Place the leg of mutton in a pot covered with cold water.
Add ½ cup of coarse sea salt.
Remove any scum that rises to the surface.
Bring to a boil.
Simmer and add vegetables
Reduce heat to simmer for 3 to 4 hours.
One hour before it's done, add turnips, carrots, whole onions, and celery.
If the water cools too much, briefly return the pot to the heat until it boils again.
Serve
Serve the mutton garnished with the whole vegetables.
Reserve some turnips to mash with cream, pepper, and salt in a separate dish.
Accompany with caper sauce or pickled nasturtium seeds and flower-buds, or chopped gherkins in white sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Leg of mutton
- Is the main meat that becomes tender and flavourful as it simmers slowly in water.
- Turnips
- Soften during cooking and can be mashed with cream for a smooth, mild side dish.
- Cream
- Adds richness and smoothness to the mashed turnips.
The step that matters
Keeping the water at a simmer. If the water cools too much, the meat cooks unevenly and the proteins can toughen. Briefly bringing it back to a boil keeps the cooking steady and the meat tender.
Swap the onion
How well each one fits the dish's main ingredients (mutton, turnip, carrot, celery, sauce, cream, pepper):
- Leekfits better
- Parsnipfits better

Fit is the average pairing score against mutton, turnip, carrot, celery, sauce, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
