Lamb-Chops, with Cucumber Sauce

Ingredients

Directions

Prepare the cucumber sauce

  1. Peel and slice the cucumbers. Season the cucumbers with salt and pepper.

  2. Melt a little butter in a stew-pan. Stir in a dust of flour.

  3. Add the sliced cucumbers and enough broth to cover them. Boil until tender.

Cook the lamb chops

  1. Coat the lamb chops in egg and bread crumbs. Broil the coated lamb chops if possible; otherwise, fry them in a small amount of butter.

  2. Arrange the cooked lamb chops around a hot serving dish.

Finish and serve

  1. Add vinegar to the cucumber sauce. Boil briefly.

  2. Serve in the center of the dish with the chops.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Soften when boiled and form the body of the sauce.
Butter
Adds richness and fat, and helps begin the flour-thickened base.
Flour
Thickens the broth into a smooth sauce as it cooks.
Egg
Acts as a binder so the bread crumbs adhere to the lamb chops.
Bread crumbs
Form a crisp coating that browns when broiled or fried.
Vinegar
Adds acidity that brightens the flavor of the cucumber sauce.

The step that matters

Boil the cucumbers until tender. Cucumbers are mostly water and can stay watery or stringy if undercooked. Cooking them fully softens the cell walls so they blend into a smooth sauce.
