Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and provide structure as the pudding sets during boiling.
Beef suet
Adds richness and fat that keeps the pudding moist and tender.
Flour
Gives the batter enough body to form a stiff paste that holds its shape.
Raisins
Provide sweetness and chewy texture throughout the pudding.
Brown sugar
Adds sweetness and moisture, and a deeper caramel flavour.
Brandy
Adds aroma and flavour to the pudding and the sauce.

The step that matters

Boiling the pudding. The pudding must boil continuously for the full time so the eggs and flour set through and the suet renders evenly. Letting the water drop below a gentle boil can leave it dense or uneven.

Swap the currant

How well each one fits the dish's main ingredients (egg, milk, beef, raisin, sugar, nutmeg, flour):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits better
  4. Currantthe original

Fit is the average pairing score against egg, milk, beef, raisin, sugar, nutmeg, flour. Candidates are from the same food group and used in at least 100 recipes.
