What each ingredient does

Fresh lean beef
Provides the main meat flavor and body for the stock that becomes the gravy.
Beef for broiling
Broiling browns the surface, adding color and a deeper roasted flavor to the gravy.
Onions
Add sweetness and aromatic depth as they cook into the liquid.
Boiling water
Acts as the liquid that extracts flavor and gelatin from the beef during stewing.

The step that matters

Skimming the fat after the first stew. Fat that is not removed early stays in the liquid and makes the finished gravy greasy and cloudy. Skimming before adding the aromatics keeps the gravy clean and clear.

Swap the clove

How well each one fits the dish's main ingredients (beef, onion):

  1. Garlicfits better
  2. Cuminfits better
