What each ingredient does

Butter
Fat that softens the vegetables gently and carries flavour without browning them.
Celery
Adds savoury aroma and body to the vegetables as they cook down in the broth.
Toasted bread
Thickens the soup as it simmers and helps give it body once rubbed through a sieve.
White wine or mushroom ketchup
Adds acidity or savoury depth, stirred in at the end so its flavour stays bright.

The step that matters

Rubbing the mixture through a fine sieve. Pressing the cooked vegetables and bread through a fine sieve breaks them down into a smooth purée. Skipping or rushing this leaves the soup coarse and stringy.
