To Roast a Leg of Lamb

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Place the leg of lamb in a roasting pan.

  3. Baste the lamb profusely with its juices during cooking.

  4. Roast for 1.5 hours.

  5. Before serving, mix the egg yolk with the gravy and baste the lamb.

  6. Sprinkle with bread crumbs and allow to brown.

  7. Squeeze lemon juice over the meat and serve with mint sauce.
