Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb cutlets
Provide the main meat, which is gently stewed in butter until tender.
Butter
Carries heat during stewing and, once beaten with egg yolks, adds richness and moisture.
Egg yolks
Bind the mixture and form a glaze that helps the bread crumbs adhere.
Bread crumbs
Form a crisp coating that browns under the broiler.

The step that matters

Stewing without browning the butter. If the butter browns during the 10-minute stew, it turns bitter and dark, and the cutlets pick up a burnt flavour. Keeping the heat gentle keeps the butter pale and sweet.
