To Scald a Sucking Pig
Ingredients
Directions
Put the pig in cold water for 5 minutes.
Rub it with powdered resin.
Plunge it into scalding water for 30 seconds.
Pull or scrape out the hairs until smooth.
Wash the pig in warm water, then in fresh cold water 2-3 times.
Remove the feet at the first joint and rip up the belly to take out the entrails.
Set aside the liver, lights, and heart.
Wash and dry the pig thoroughly, then fold it in a damp cloth until ready to dress.
