Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the meat that is cooked and browned under the broiler.
Bread crumbs
Form a crisp, browned coating on the outside of the birds.
Oil or clarified butter
Carries the seasoning and bread crumbs and helps the coating brown.

The step that matters

Broil until nicely browned. Pigeon meat is lean and dries out quickly, so watch the color and timing closely over the clear fire. The bread crumb coating should brown evenly without burning before the meat is cooked through.

Swap the chive

How well each one fits the dish's main ingredients (butter, pepper, parsley, bread):

  1. Carrotfits better
  2. Shallotfits better
  3. Capsicumfits about as well
  4. Chivethe original
