Why it works: White wine and vinegar are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 1,776 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓
Raspberry or Strawberry Vinegar
Ingredients
Directions
Infuse the fruit
Place fresh fruit in stone jars and pour 1 quart of white wine vinegar over each pound of fruit.
Let the mixture stand for 1 day, then pour off the vinegar and repeat with the same quantity of fresh fruit.
Continue this process until the last batch, then strain through a canvas bag dipped in vinegar.
Sweeten and bottle
Add 1 pound of sugar to every pint of vinegar and simmer for 5 minutes until nearly dissolved.
Let it stand for 12 hours, then skim and bottle.

What each ingredient does
- Fresh raspberries or strawberries
- Provide the main fruit flavour and aroma that the vinegar takes up over repeated steeping.
- White wine vinegar
- Extracts and carries the fruit flavour and gives the drink its sharp acidity.
- Sugar
- Sweetens the sharp vinegar and balances its acidity.
The step that matters
Simmering the sugar into the vinegar. Sugar must dissolve fully into the vinegar without boiling hard, since prolonged vigorous heat can darken and dull the fruit flavour. Stopping once nearly dissolved and letting it stand lets the syrup settle clear before bottling.
