The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

  1. Ginger + lemontop 5% of all pairs
    Smell alikestrong
    Cooked together5,154 recipes

    Shared aroma: beta-phellandrene (minty, terpene).

  2. Ginger + creamtop 29% of all pairs

    Shared aroma: 1-octen-3-one (mushroom, metallic).

Shared aroma: acetic acid (sour, vinegar).

Lemon and cream barely smell alike, yet cooks put them together in 15,640 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ginger
Provides the main aroma and spicy flavour of the drink.
Yeast
Ferments the sugars, producing carbonation and the drink's fizz and alcohol.
Lemon juice
Adds acidity that brightens the flavour and balances sweetness.
Cream of tartar
Adds acidity and helps stabilise the mixture during fermentation.

The step that matters

Let the mixture cool nearly to room temperature before adding the yeast. Yeast is killed or weakened by very hot liquid. Cooling the mixture first keeps the yeast alive so it can ferment properly and produce fizz.

Swap the lemon

How well each one fits the dish's main ingredients (ginger, cream):

  1. Coconutfits better
  2. Limefits better
  3. Orangefits about as well
  4. Lemonthe original

Fit is the average pairing score against ginger, cream. Candidates are from the same food group and used in at least 100 recipes.
