Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main protein; browning and slow simmering make it tender.
Ghee
Carries the spices and adds rich fat and a nutty aroma when fried.
Yogurt
Adds moisture and tang, and its acidity helps tenderize the meat during simmering.
Onions
Fried until golden to add sweetness, body and depth to the sauce.

The step that matters

Browning the mutton thoroughly. Searing the meat builds deep, savoury flavour through the Maillard reaction. Meat left pale and steamed tastes flat, and the sauce loses depth.
